Cinnamon Apple Chia Pudding

As I continue to break outside of the quinoa recipe box, this time I’ve set my sights on chia pudding. I’ve heard so many people rave about not only howIMG_6754 nutritious it is, but how delightful chia pudding is on the tongue. Cinnamon Apple Chia Pudding is an easy dessert to make without a lot of prep time.

First off, place the chia seeds into a small to medium sized bowl. Then add unsweetened, vanilla almond milk, coconut sugar and vanilla extract. Whisk until all the ingredients are mixed together well. At this point you’ll want to spoon out the chia mixture into four cups or bowls. Whatever you plan to serve this delicious dessert in, cover and place into the refrigerator. You’ll want to let it set overnight.

IMG_7124IMG_7129IMG_7126IMG_7130Now to the topping! Simply slice up an apple. I used an opal apple since it’s a little sweeter, but you can use any type of apple you fancy. Then place the slices in a coconut oil coated pan on medium heat. Sprinkle with coconut sugar and cinnamon then let the heat do it’s magic. You’ll want to stir the apples to make sure both sides are getting coated. Once you see a brown syrup mixture in the bottom of the pan you know they’re ready. Take out your bowls of chia pudding, top with apples then serve. Bon Appétit!

Tip: if you’re not an almond milk fan you can use coconut or cashew milk with this recipe!


  • 1 cup vanilla almond milk (unsweetened)
  • 5 1/2 tbsp chia seeds
  • 2 tbsp coconut sugar
  • 1 tsp vanilla extract


  • 1 Apple
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon

Directions: place chia seeds in medium bowl. Then add almond milk, coconut sugar and vanilla extract. Whisk ingredients together. Spoon chia mixture into four bowls, cover and place into refrigerator overnight. For topping, slice up an apple. Place apple slices in coconut oil coated pan over medium heat. Sprinkle with coconut sugar and cinnamon. Once you see a brown syrup mixture at the bottom of pan, scoop out and top each chia pudding bowl. Serve and enjoy!
