Ah, coconuts! There’s a variety of coconut-derived ingredients from coconut oil to coconut flour to coconut sugar and coconut milk just to name a few. All of these ingredients can help deliver a nutritious power punch within our diets and have so many health benefits. And coconut butter is no different than it’s counterparts.
- Boosts metabolism helping to aid in weight loss and increased energy.
- Full of essential amino acids, calcium and magnesium.
- Packed with healthy fats to keep you feeling full longer.
- Rich in lauric acid, boosts immunity and destroys harmful bacterias, viruses and fungus.
Why spend a lot of money for a store bought version of coconut butter when you can make it at home in no time! Here’s a two ingredient, simple recipe anyone can do. Yes, it’s really that easy. First off you’ll need dried, shredded, unsweetened coconut and sea salt or I used himalayan pink sea salt for taste.
Simply add the two cups of coconut into a food processor or Vitamix blender and mix on high for around 15 minutes. You’ll know it’s ready when a thick paste is formed, almost like peanut butter. During this process, keep scraping down the sides to make sure all of the shredded coconut gets into the mix. Once the coconut has been ground to a thick, but spreadable consistency add some salt if desire. You can also leave it plain and add the salt when serving. You’ll want to store in a small jar in the refrigerator. Bon Appétit!
Note: you’ll need to soften in microwave for 10 to 15 seconds before serving.
