I’m always looking for easy ways to eat healthy while on the go! I’ve come across another recipe I’ve made my own that’s simple, quick and will wow your tastebuds. We’ve all been there, that afternoon craving or slump kicks in and you’re out of healthy snacks. These vegan coconut protein bites will help kick hunger to the curb while nourishing your body with some much needed nutrients. I love to eating these delicious bites an hour or so before heading to the gym to make the most of my workout. The best part of these protein balls, no oven!
Simply add the organic rolled oats, organic shredded coconut, ground flaxseed, peanut butter, vanilla extract, organic raisins, coconut sugar, maple syrup (or honey/agave nectar) and water in a medium sized bowl. Then mix ingredients together. It may be a little stiff at the beginning, but make sure to really get everything stirred together well. The peanut butter may want to glob together but it will mix in with everything as long as you keep stirring.
Once you’ve created a nice consistency, it’s time to get your hands sticky! Roll the oat coconut mixture into balls. This recipe should make about 15 energy bites, depending on size, it could make more or less. Store in an air tight container in the refrigerator or freezer. Bon Appétit!
- 1 cup organic rolled oats
- 2/3 cup organic shredded coconut (unsweetened)
- 1/4 cup ground flaxseed
- 1/2 cup peanut butter (unsweetened)
- 1 tsp. vanilla extract
- 1/4 cup organic raisins (unsweetened)
- 2 Tbsp. coconut sugar
- 2 Tbsp. maple syrup or honey or agave nectar
- 2 Tbsp. water
Combine rolled oats, shredded coconut, ground flaxseed, peanut butter, vanilla extract, organic raisins, coconut sugar, maple syrup (or honey/agave nectar) and water in a medium sized bowl. Mix well. Roll into balls. Place in air tight container to store in refrigerator or freezer for up to a month.
