Homemade candy made easy! Whether it’s a sweet tooth you want to cure or create a healthy dessert for a dinner party, this recipe for vegan peanut butter fudge is super simple. You’ll only need two ingredients, a glass dish and parchment paper.
The two ingredients are dates and non-gmo organic peanut butter. Some quick tips, I bought pitted dates to save time. You’ll also want to make sure the peanut butter is sugar-free if you’re trying to stick with clean eating. This recipe is the perfect balance of protein and natural sugar.
First, add 12 organic pitted dates into a food processor or a blender. I used my ninja for this recipe. Then add one cup of peanut butter. Process the ingredients together until the mixture thickens almost into dough-like ball. Scoop out the dough-like peanut butter mixture and press firmly into a dish lined with parchment paper. Place dish into freezer for two hours. Then cut the fudge into squares. It’s recommend and much easier to cut the fudge right after taking it out of the freezer. The peanut butter fudge will keep for up to a week in the refrigerator or a month in the freezer. Bon Appétit!
